Podere Spedalone is one of the most historically significant estates in the Val d'Orcia. First documented in the 13th century, when Augustinian monks planted the ancient olive trees that still produce our celebrated extra virgin olive oil today, this land has been tended with care across centuries — and now we share it with you.
Certified Organic
Every aspect of the farm — olive oil, produce and hospitality — is certified BIO. We use no pesticides and minimal intervention.

La Pecora Bianca serves authentic Tuscan food grown steps away. Herbs, vegetables and fruit come straight from our garden to your plate.

Extra Virgin Olive Oil BIO
Our olive oil is one of the estate's greatest treasures. Pressed from trees planted by Augustinian monks in the 13th century — three varietals, harvested and cold-pressed on the estate — this is extra virgin olive oil of extraordinary character.
