Our Olive Grove is a testament to the enduring legacy of the land, its stewards, and centuries of time-honored traditions. Nestled in the heart of the enchanting Tuscan landscape, our grove’s story is deeply rooted in history, dating back to the 13th century when Olivetian Monks carefully selected and planted olive trees in our fertile volcanic soil. 

Today, our olive grove stands as a living connection to this rich heritage. At the heart of our grove, you’ll find a diverse tapestry of a thousand olive plants, each one nurtured with care and precision. These olives belong to eight distinguished varieties: 

Moraiolo, Leccino, Pendolino,  Frantoio, Cureggiolo, Maurino, Canino, and Miniolo. 

It’s their unique character, nurtured by the volcanic soil, that imparts exceptional flavor and health benefits to our olive oil. We take great pride in continuing the traditions of the Olivetian Monks, crafting our olive oil as a medicinal-quality elixir. This means that with every bottle of our olive oil, you experience not just remarkable flavor but also the many health benefits that come from the expertise of centuries.

   Cultivated in the Val d’Orcia  

Our Farm is situated at an altitude of 400 meters above sea level, is truly remarkable. This area, nestled within the UNESCO World Heritage site, offers breathtaking panoramic views of the Val d’Orcia. The stony, volcanic soil in this region provides an excellent foundation for the production of high-quality olive oil.

Among the varieties predominantly cultivated in this fertile soil, you can find a rich tapestry of flavors, including Moraiolo, Leccino, Pendolino, Frantoio, Cureggiolo, Maurino, Canino, and Miniolo olives. These unique olive varieties thrive in this environment, contributing to the exceptional character and quality of your olive oil.

 Harvest Period

The harvest period at Podere Spedalone typically starts in early October.

During this time, olives are collected when they are still green to ensure the highest quality and health benefits of the resulting olive oil.

The olives are pressed on the same day they are collected, a process known as cold pressing, which helps preserve the oil’s nutrients and prevents overheating.

This careful harvesting and pressing process is crucial for maintaining the quality and flavor of the olive oil produced at Podere Spedalone.

The Harvest of Our Olives

Our harvesting process combines the best of traditional and modern methods to ensure the highest quality olive oil. The olives are carefully handpicked with the assistance of mechanical facilitators, allowing for efficient and precise collection.

The timing of olive harvesting and processing is crucial for producing high-quality olive oil. Harvesting the olives and taking them to the oil mill within 8 to 12 hours is essential for several reasons:

  1. Freshness: Olives are perishable fruits, and the moment they are picked, they begin to deteriorate. Processing them quickly preserves the freshness of the olives, which directly impacts the flavor and quality of the resulting olive oil.

  2. Preventing Fermentation: Allowing olives to sit for an extended period before processing can lead to fermentation, affecting the oil’s taste and quality. Quick processing prevents this.

  3. Preserving Nutrients: The longer olives are exposed to air and light, the more their nutrient content can degrade. Rapid processing helps retain the beneficial compounds and health benefits in the olive oil.

  4. Minimizing Spoilage: Delayed processing increases the risk of spoilage, which can result in off-flavors and a lower-quality product.

By ensuring that olives are processed promptly after harvest, we are guaranteeing that our customers receive olive oil that’s not only fresh but also packed with flavor and health benefits. This commitment to quality sets our  olive oil apart.

The use of a continuous cycle oil mill for mechanical extraction, while maintaining cold temperatures below 27°C, is a key factor in preserving the oil’s quality. This cold extraction process helps retain the oil’s unique flavors and health benefits.

After this meticulous extraction process, the olive oil is stored in our warehouse, where it awaits bottling. The final product is then available for purchase at a sales point and can be conveniently shipped directly to your customers’ homes. This commitment to quality at every step of the process ensures that our customers can enjoy the finest, freshest olive oil.
